Vegan Poke Bowl

Yields4 Servings
 2 fire-roasted red bell peppers, thinly sliced
 2 medium-sized carrots, grated
 ½ cucumber, sliced
 2 spring onions, chopped
 2 cups edamame, cooked
 1 avocado, sliced
 4 cups rice, cooked
 1 tsp sesame seeds (or Trader Joes Everything Seasoning)
 ¼ nori sheet, cut into thin stripes
SAUCE
 2 tbsp honey
 4 tbsp tamari or Braggs liquid amino acids
 4 tbsp rice wine vinegar
 2 tsp ginger, freshly grated
 1 tsp garlic, freshly grated

Cook rice per package directions.

Prepare vegetables as suggested above or to your preference.

Divide rice into four serving bowls and place vegetables over top.

Place all sauce ingredients into a mixing bowl and whisk together.

Drizzle bowls with sauce. Sprinkle with sesame seeds and nori sheets.
